Raw dark organic chocolate, also known as raw organic cacao, is essentially cold-pressed cacao beans, normally with a small amount of high quality raw sweetener. Raw organic chocolate has seven times the antioxidant power of commercially available cooked chocolate, which according to David Wolfe, author of Naked Chocolate, makes cacao the No.1 antioxidant in the world. Unfortunately, modern processed chocolates available at most stores have limited health benefits since they are processed at high temperatures (cooked) and in very alkaline environments which destroys the sensitive nutrition found in the cacao beans. Healthy dark organic chocolate, on the contrary, is nutrition-rich with high levels of vitamin C, omega-6 fatty acids, magnesium, chromium, and iron is also one of the best sources of natural fiber.
